When the world transformed under the pressures of the COVID-19 pandemic, people all across the globe were imprisoned in their own houses, terrified of exposure. While we suffered, the planet celebrated its freedom from the human race. The streets were empty of traffic and carbon emissions went down, people were avoiding meat, inducing a renewed interest in vegan and vegetarian recipes. Air pollution reduced and animals enjoyed a rare freedom, for a while. The change was by no means sustainable.
In January 2021, global land and ocean surface temperature was 0.80°C (1.44°F) above the 20th century average and ranked as the seventh warmest January in the 142-year global records. At 416 ppm, CO2 concentration in the atmosphere is the highest in human history.

We are on a slippery slope to catastrophic weather conditions like extreme heat, precipitation or snow and inundation of coastlines with sea levels rising by as much as 8.2 feet by 2100. How do we help the environment – how do we help ourselves?
